How to Cook Hyderabad Dhum Instant Biryani (Pressure Cooker / Instant Pot)
Gently wash long-grain basmati rice and soak it in water for 30 minutes.
In a mixing bowl, marinate 400–500g of chicken, meat, or vegetables with the contents of the marination pouch.
Let it rest for at least 1 hour (the longer, the better for deeper flavour).
In a separate large pot, add 1 litre of water along with the contents of the biryani spice pouch and 1 tsp of ghee or oil (optional).
Bring to a rolling boil until the fragrant aroma of the spices is released.
Drain the soaked rice and add it to the boiling spiced water.
Cook until the rice is about 90% done.
Strain the rice and gently layer it over the marinated meat in a heavy-bottom vessel.
Spread the rice evenly across the top.
Sprinkle a few spoons of the reserved rice water over the layered rice to retain moisture.
For dum cooking:
Place an iron tawa or pan on the stove.
Place the biryani pot on top of the tawa.
Cook on high heat for 5 minutes, then reduce to low heat and cook for 25 minutes.
Turn off the heat and let it rest with the lid closed for 30 minutes.
Gently fluff and serve hot with raita, mirchi ka salan, or a boiled egg.
For mutton/goat or other red meats:
Pre-cook the meat in a pressure cooker for about 30 minutes until tender. Then layer with rice and proceed with dum cooking for 30–40 minutes.
